My roast potatoes tip
Boiled for ten minutes.
Put potatoes in ovenproof dish & coat with extra olive oil
Place on the bottom shelf if you have a fan assisted oven
Full heat at 200 for 90 minutes

I do the same but crumble an oxo cube over the top before putting in oven, browns them beautifully.

I don't get the love in for roast potatoes. Give me a nice buttery mash every time.

I just love potatoes in so many ways and they all have their place with different foods.

Boil mine for around 7-9 mins, drain, then place a piece of kitchen roll over the pan and then put the lid back on. Leave for half an hour, the paper draws out any moisture and then I give them a really good shake in the pan to fluff up the edges. Then into cold rapeseed oil and toss. Into oven at 180 for one hour....(Asda do a lovely roast potato seasoning that you sprinkle over before popping in the oven but I haven't tried it with roasties yet)

I think my hatred of mash comes from plastic mash from boarding school and the army...

Fatty meat, lumpy mash, rock hard veg, lumpy custard, frogspawn with jam (semolina?).....I started taking sarnies to school for lunch at 'big school', couldn't hack school dinners
I do have a 'poem' that we used to say at school about school dinners....not sure if I should post it
